Round two of Trick-or-Treat was yesterday for our house. Thankfully this round had 6 less inches of snow then round one, but there was still a nice fall bite to the air. The Dad’s were on Trick-or-Treat duty, which left me home to get dinner going and passing out candy to the all the ghouls, goblins, and superheroes that walked up to my door.
I couldn’t think of a more fitting fun dinner to serve then Jack-O-Lantern Stuffed Peppers. I tailored the recipe to better fit my family’s taste (I omitted the black beans and doubled the cheese). Almost everyone at the table got the clean plate award, including the kids! Considering all the candy that was at easy disposable I took that as a huge compliment. We will definitely be making this adorable delicious dinner again!
